Trouble Knitting in R Markdown : Tinytex package

I am having challenges knitting my file to pdf and I am getting the error message pasted below. I have tried all the debugging suggestions on the document below but nothing seems to help solve the problem Kindly assist.

You need to use LaTeX engine that supports Unicode character. See
