I am a medical student and I would like to start learning R from scratch, mainly for medical and clinical data analysis (e.g., analyzing questionnaires, Likert scale data, and basic statistical tests).

This depends to some extent on your earlier education but in any case you are really looking at basic statistics and data analysis rather than a tool like R.
I cannot think of anything immediately that is really suitable but some of the productions here https://www.youtube.com/c/equitableequations under the Stats 101 label may help.
A quick google brings up this book https://pubrica.com/wp-content/uploads/2021/07/Medical-Statistics-final.pdf that, on a quick look, looks like a good intro if you have not studied any statistics. It looks much more reasonably written than a lot of intros.
